This is an easy, elegant and delicious addition to any meal. The key to this dish is using the best fresh ingredients. I used vine ripe cherry tomatoes and kept the vine attached for presentation.
Ingredients:
9 Prawns, Peeled and Deveined
Kosher Salt
Fresh Ground Pepper
1 Tbsp Olive Oil
Juice of 1/2 Lemon
20 Cherry Tomatoes, on the Vine
Recipe
Directions:
1. Preheat the oven to 400 Degrees F.
2. Toss the Prawns in Olive oil, salt and pepper. Place on a sheet pan. Add tomatoes to sheet pan and drizzle with olive oil, salt and pepper.
3. Roast in the oven for about 10 minutes until pink and tender.
4. Sprinkle fresh lemon juice over shrimp. Plate and serve.
